Seed stock: produced by the company itself from RISO A RESIDUO ZERO (“certified residue-free rice”)
To remove the moisture, we opted for a “gentle” drying process, using an airflow compensator produced by the Miniera company (more information available in the downloads section). This allows the grains to retain all of their organoleptic qualities.

The paddy rice was stored in chamber 2 of our storage facility in Stroppiana.
